Most of the time quite a lot. I try not to spend too much of my life worrying about the detail though – life is meant to be enjoyed, and so is food. I make sure I get the basics right first, then always make room for great dessert.
My late grandmother Alice….I miss her and would love to catch up again. Antonin Careme, the groundbreaking 19th century pastry chef who pioneered moder cuisine – he’s the archetype chef. The author Michael Ondaatje – I have so many questions to ask him about his work.
