Soon after, an Asian friend in Northern Virginia made a tray full of them for snacking at a party she hosted. I couldn’t believe my luck; I could eat as many as I liked. Usually you get only a couple of them when they’re ordered as an appetizer, but that’s always a tease; it’s never enough.
And my wife is a big fan of them, too. We sometimes head to the farmers market in Carytown, in Richmond, where there’s a lady cook who serves noodle-and-vegetable stir-fries and then tops them with a couple of spring rolls, along with a few squirts of Sriracha and some Thai sweet chili sauce. Best dish ever!
But, hey, I wanted to be able to prepare dishes like that at home. I already had the stir-fry thing down pretty well from years of being obsessed with Chinese food.
