remove the tortilla shells
You’ll need some empty food cans or sturdy glasses that will withstand being in the oven. Preheat the oven to 400°F. Set the cans or glasses upside down on a cookie sheet, and spray them with nonstick spray.
Fill a pie plate with very hot water. Dip each flour tortilla into the hot water for a few seconds (long enough for it to become pliable, not long enough for it to get soggy), and then drape it over the can or glass, repositioning the natural folds, if you like. You’ll probably only fit 2 or 3 per cookie sheet.
Bake for 5 minutes. Remove the pan from the oven, remove the tortilla shells from their moulds and place them right-side-up back on the cookie sheet, without the cans. Return to the oven for another 3 minutes, or until pale golden and crisp.
